How to Make a Roux (and Oh, All the Things You Can Do!)


Use same parts butter and flour. I use
1/4 cup butter
1/4 cup flour
for a family-sized recipe, but I often double this if I want my dish extra creamy or extra large.

Melt the butter in a pan; add the butter over medium-low heat.
Whisk constantly until blended and slightly brown.

Before the mixture browns too much, add 
1 cup milk
1 cup broth
(If you're doubling, add 2 of each.)
I also add 1 boullion cube for each cup of liquid. I love the Wellsley Farms Chicken Flavored Bouillon Cubes)

That's all there is to it! Then you can add whatever meat, vegetables, and starch you want. I often make this with peas and chicken or peas and ground beef and add either rice or noodles, but you can add whatever you like!
